This is a deliciously simple recipe to whip up in a hurry. Also known as Pistachio Delight and Green Fluff, this recipe is popular in the American southern states. I grew up eating this on most holidays (Thanksgiving, Christmas and Easter). The ingredients sound a little odd, but it is delightful!
- 1 (4 ounce) package instant pistachio pudding mix
- 1 (20 ounce) can crushed pineapple with juice, undrained
- 1 cup miniature marshmallow
- 1/2 cup chopped Maraschino cherries (optional)
- 1⁄2 cup chopped pecans
- 1 3⁄4 cups whipped cream
Mix pineapple and pudding mix together until well combined. Add pecans, cherries and marshmallows, then gently fold in whipped cream. Chill in fridge for 1 hour before serving.
