Potage Garbure (soup)

Garbure is a thick French soup or stew of ham with cabbage and other vegetables, usually with cheese and stale bread added. This is a vegetarian version. Easy to make and delicious!

1 1/2 fl oz Extra-virgin olive oil

8 oz onions, small dice

3 1/2 oz carrots, small dice

2 garlic cloves, minced

1 1/3 qt chicken stock

6 oz potatoes, small dice

5 oz zucchini, small dice

5 oz cabbage, shredded

5 oz tomatoes, whole canned

4 oz turnip, small dice

3/4 oz salt



Heat olive oil over medium, add onions and carrots, cook about 5 minutes until onions become translucent. Add the garlic and cook for another 3 to 4 minutes, stirring frequently.

Add the remaining ingredients and simmer the soup gently for 30 minutes, or until all of the vegetables are tender. Puree the soup until smooth. Salt to taste.
