We all know about people (and a lot of other animals) eating sunflower seeds, but did you know that you can eat sunflower greens or baby sunflower sprouts? We didn’t know this until the other day when we got a bag of organic sunflower greens in our local co-op share. (We recently joined an organic co-op in our area, hoping that it would give us the opportunity to try foods we haven’t had before, to eat more of what’s in season and the health benefits of organic at a good price).
Sunflower greens are very tasty! We enjoyed them today on a veggie sandwich. I researched online and found out that they are a nutritional powerhouse packed with vitamins A, B complex, D, and E; they also contain minerals including calcium, copper, iron, magnesium, potassium, phosphorus and zinc. They are a great source of fiber as well.
If you come upon them I highly recommend that you give them a try!!
